Apple Quinoa Salad with Celery and Chives

Ingredients

  • 1 cup quinoa any color
  • 1 cup celery thinly sliced
  • ½ cup chives or red onion chopped
  • 2 cups apples diced

For the dressing

    • 2 tablespoons olive oil extra-virgin olive oil or walnut oil
    • 1 tablespoon honey or maple syrup
    • 1 tablespoon balsamic or apple cider vinegar
    • pinch of crushed chilli (optional) 
    • pinch of salt

Instructions

  1. Cook the quinoa and let it cool.
  2. In a salad bowl whisk the olive oil, the honey, the balsamic vinegar, the pomegranate molasses, the crushed chili and salt.
  3. Add the quinoa, the apples, the celery and the chives.
  4. Stir it well and serve.

Tips: Feel free to add your favorite protein like grilled chicken, shrimp, or white beans to make this meal a main dish. Get creative with your veggies; this is a great recipe for using up vegetables in your produce drawer.


How to Cook Perfect Quinoa?

1/2 cup quinoa and 3 cups water

  1. In a saucepan pour the water and bring to a boil.
  2. Rinse the quinoa.
  3. Put the quinoa in a saucepan.
  4. Cook the quinoa for 15 minutes.
  5. Drain, refresh under running water and set aside to dry well.
